
Hawkers in Singapore prepare ducks generally in 3 ways.

Roast Duck, Cantonese in origin, would almost always be sold together with other roast meats like char siew and siew yoke.

Braised Duck have 2 different styles, the Hokkien (Fujian) or Teochew (Zhaochou) style. They are braised very much the same way, the difference is mainly in the gravy. The Hokkien style will have thick starchy gravy poured onto the duck or rice, while the Teochew style has an intensely rich watery gravy that accompanies the duck, most will pour some into the rice as well.

Pipa Duck, we don't see that much anymore. It is a roast, just done differently with the carcass split open, making it look like the pipa, an ancient Chinese string instrument.

This section would present the braised version. They are usually sold with rice, or kway chap; sometimes with noodles or porridge. I have another section on roast meat, which would include duck too, but will include such shops below.

Braised duck with a deep robust taste
I was waiting for them to open for business while enjoying a cup of tea, place was quiet, they turned on their lights while I was fingering my phone, looked up and suddenly there was a Q of 5-6!
I waited lonely uploading files to the cloud, for when Tai Dong’s opening is due, when all at once I saw a crowd, a host of people in Q, just beside me, under the fans, when before it was only breeze…. Not quite as impressive as Wordsworth but I felt I shared his awe when he saw those daffodils.
Stayed calm… thankfully after about 10 mins the Q had their duck and the crowd was gone

I was a little disappointed with my plate of duck, maybe they used a plate too big for one person, it looked empty and there was very little gravy ($4). Asked and I was given more, gravy, not duck… I have since learned to upsize my duck, the photo on the left below was my first order.
A plate of cabbage was added for just $1, great especially when the sign, though slightly faded seemed to write $2-3.
More gravy was added to my rice from the additions given, had a sample of plain rice with gravy and it was nice, very promising.

The duck was quite good, maybe a bit on the tough side but I was happy with it. The gravy though, was excellent, a very deep, strong and robust taste that lingered and lasted. Absolutely delicious, with a bias towards savoury and umami.

Amongst the braised duck stall, this one stood out for its sharp deep taste. The chilli here was pleasant enough, more sweet and garlicky than spicy, it went very well with the duck and gravy.

Of the braised duck rice I’ve tried, Tai Dong sticks out, and is the best Teochew style braised duck I can think of. Many of my friends agree, I was quite surprised jiak kaki Heman, he who doesn’t travel beyond 2km from his home for food, actually said this is his favourite, and he comes here often to buy, especially for his father, who loves it. Uncle whose family and in laws are hawkers…
Also brought my little sister here on a secret date, when both our others halves, who dislike duck, were not available, she too thought highly of them, suggested we came here again on another similar occasion! 😆😎

"Didn't know braised duck can taste so good"
When we talked duck, Alan mentioned the above quote when talking about Chuan Kee. Tried them years ago but they didn't leave a big impression though I thought it was good.
This time round, I saw Michelin stickers, but thankfully the long Q I noticed before was absent, it was only 930 am. Duck rice, with some braised pork too...
Really, Chuan Kee was scary. Immediately I felt it was a notch above all the rest. There was a slight uptick and eye opener taste, an oomph that hit me on the first bite. I had to agree with Alan, who is quite a duck lover, so he knows better.

Braise sauce that raised my eyebrows, it had a very good uptick taste. Like someone giving you a pat on the shoulder as encouragement, with a gentle kick on the backside. You remember it and get more motivated. It was all in the sauce, as the duck, as well the pork, were quite regular.

Rich and thick, the duck sauce was delicious, very different from any I've tasted. A very refreshing yet strong flavour that lingers. Probably the best Hokkien style of braised duck.

As for the duck and pork, I have to say they were just about ok, it was good but I can’t say they were better than any others that I have tried. It was their sauce that was really special.

Likewise the duck and chilli here, pretty good, but really can’t say they are better than most. The chilli mix here was quite impressive though.

This has now become my recommended braised duck place, I'm trying to get a bunch of my other duck loving friends to come here for a try. Will update when they finally get their butts off to visit "the west side" of the island...

Delicious and tender duck
Lagoon hawker centre is usually quiet during lunch on weekdays, there are about 5 very famous stalls here, Cheok Kee is one of them.
A friendly lady runs this place, she took over from her father some 20 years ago. The good news is her son is now the one chopping and slicing the ducks, she has a successor.

The duck was tasty and tender, well sliced by the young man. The duck gravy thick and saucy, very delicious. A good amount was given with the plate of duck for two, duck portion was generous too.

Pour the gravy onto the yummy yam flavoured rice to get more kick out of it. Don’t forget to add some chilli too, which was more soury sweet and garlicky than hot spicy.

PS Didn't know there are 2 Cheok Kee's. The other at Geylang Bahru, very popular and Michelin recommended, could be related. If I were to make a bet, I'd put $98 of my $100 on them being siblings. Shall ask them next time I visit, the one at Lagoon, she's friendlier, a lot... 😅😅😅
