
There are 2 types of oyster omelettes, fried oyster and, well oyster omelette.
Fried oyster is fried egg with oyster added, eggs are in pieces, some do make it like an omelette.
The oyster omelette, is fried oyster with tapioca starch added to the mix. The starch adds a sticky chewy texture to a normal fried oyster.

Introduced to me by a self confessed fussy eater, owner of one of my favourite hawker stalls, when I didn’t ask for any… he just told me out of the blue this place serves the best oyster omelette. I had to investigate!

Never a doubt, I was not disappointed. Nice fresh big oysters, nice fresh gooey omelette, it was damp in the right way, and tasty in a better way. The chilli that came with it was not spicy but went well as a sauce or gravy with the omelette.

Texture of the omelette was as good as the wonderful texture of a nice fresh oyster, all soft and savoury. Imagine the oyster was considered the harder part of this dish texture wise, and I mean it in a good way. It gave the whole dish a brilliant chewy texture amongst the nice soft omelette.
Always trust a fussy eating chef, this oyster omelette is probably the best! 😎

Excellent carrot cake, and wonderful oyster omelette. Brilliant 2 in 1 stall.
They must have changed their name from what I notice in their facebook page, my photos are current! Just as well, this is the guy that taught me how to enjoy good fried carrot cake!
The boss is a fan of a stall nearby, with long Q, she would usually Q to get what she wants and I’d patiently wait at a table. Mr Hock (not his real name…) recognised me and one day we chatted as I decided to order some carrot cake. It had always been dark carrot cake for me, but Mr Hock told me what I was tasting would just be the sweet sauce, not the carrot cake. To enjoy a good one, I must eat it white, that’s when you can tell the quality of the cake. Side glancing him, I asked if he had good carrot cake, “of course!”...

It was a life changing experience! His carrot cakes were specially made to his specifics from a factory. It was tender, soft but yet has a good solid bite. Not soft and moist at some places, or too hard and at others. He fried his carrot cake well as well… what came out was a delicious and tenderly solid plate of carrot cake. At good price too!

Not sure why his facebook page has photos of awards for the fried oysters, he should be recognised for his carrot cakes! But then again, I should try his fried oyster….
And I did, the fried oyster here was quite delicious too. The omelette fried crispy at the bottom, and soft with juicy half cooked oysters on top. The crispy bottom is fried to the point of being charred, something I love, but it is only the bottom layer. The end product was a great combination of crispy but soft scrambled like egg, with big juicy oysters; texture wise it was fantastic. Taste wise, it was well brilliant too. No surprise they have some accolades, not many stalls do both carrot cake and oyster omelette well, Hock Kee could well lead the race for this!

Crispy omelette, fresh oysters
It was a rainy day that I drove past the circuit road food centre, I haven’t had any food yet and it was almost 5pm, with a dinner appointment coming up. Hungry, fried oyster or an oyster omelette seemed like a good stop gap.
Turned out to be a wonderful meal! Nice big juicy oysters, and chef uncle cooked his omelette well.

Being stingy, I chose the cheapest $5 for the fried oyster instead of the $10 omelette. The difference being the omelette had no potato starch.
Lots of crispy and charred bits, this mixed with the juicy oysters and the sticky chewy potato starch, you have a nice mix of texture that ended up like a bag of good snack, you can’t stop eating.There were lots of crispy charred bits of omelette, a good dose of chewy starch too. Even without the oysters, these were wonderful. I was enjoying this oyster omelette like that, with the “occasional” treat of an added oyster. Well worth the $5.
